Gnocchi pomodoro

  1. Pre-heat a non-stick medium to large frypan over a medium to high heat.
  2. Open prepacked gnocchi and tip into a bowl or plate and separate the gnocchi if they have stuck together.
  3. Add a small amount of oil to just cover the bottom of the pan. When oil is starting to smoke, carefully add gnocchi to pan.
  4. Toss gnocchi in the pan (stir if you’re not feeling adventurous) to get an light, even browning on all the gnocchi.
  5. When gnocchi are browned, remove from heat, let pan cool slightly, then carefully add contents of the tomato sugo bag into pan.
  6. Reheat to a simmer and serve onto plate or bowl.
  7. Top with torn buffalo mozzarella, sea salt and cracked black pepper, and add little drizzle of extra virgin olive oil.
