The City Wine Shop is delighted to introduce you to Ayala, one of the original Grandes Marques established in 1860. This unique house was bought to our attention by neighbouring Champagne Bollinger who took over the estate two years ago. After some remodelling Bollinger recently introduced Champagne Ayala to the Australian market to great acclaim.
Champagne Ayala Brut Majeur ~ Shelf $88 Currently $70 Like Bollinger, the style is pinot driven with minimal dosage of 8g/l. However, by contrast, it is an aperitif
style entirely fermented in stainless steel offering restrained savoury fruit with fine concentration and real
finesse. A portion of their grapes are sourced from their own vineyards in the Mareuil-sur-Ay, a premier cru
village that is realistically considered to rate in the grand cru league. The remainder of their fruit is drawn
from respected villages such as Cramant, Chouilly, Bouzy and Le Mesnil-sur-Oger, in total amounting to 600,000
bottles/year.
Ayala Rose Champagne ~ Shelf $107 Currently $99 With delicate strawberry, pomegranate notes this is an elegant style that is well structured & flavoursome finishing savoury & dry.
1999 Ayala Blanc de Blancs Shelf $120 Currently $108 The Blanc de blancs is beautifully composed with citrus fruit and quartz-like acid, an impressive introduction to the Ayala style.

Jacquesson Cuvee 732 ~ Shelf $91 Currently $70 Jacquesson have become masters of
creating new, interesting cuvees and concepts. The base wine comes from the impressive 2002 vintage
and the rest is reserve wine. The proportion of oak barrel and grand cru vineyards is very high in this
unfiltered and faintly dosed wine. For the moment there are tons of young pear-scented fruit and subtle honey
tones. These will become even more complex in time, and the present high-classed chardonnay will come to be
even more creamy.
1997 Jacquesson Avize Blanc de Blancs ~ Shelf $150 Currently $135 This vintage produced charming champagnes with richness and depth tamed by the austerity and dryness that is the Jacquesson
trademark. Partially fermented in oak the wine is intense and lemony with notes of glace ginger and hazelnut.
